Over the years, I’ve been searching the globe to add worthy pepper companions. I’m happy to say that I’ve struck pepper gold again.

Recently, I came across a small farmer named Mr. Siew from Sarawak, Malaysia who is doing revolutionary things with peppercorns. And that’s saying something for a spice that’s been around for thousands of years.

Traditionally, fresh pepper berries are dried in the sun for several days until they turn black and hard. But Mr. Siew is a pepper pioneer (pepperneer?). He has come up with new ways to achieve exceptional flavor and texture.

Within 24 hours of harvest, Mr. Siew dries his pepper berries in pressure cookers at intense temperatures. As a result, his peppercorns retain heat (these are hotter than our Tellicherry), beautiful aroma and a pleasing dry and crackly texture.

For his Redwood Smoked Peppercorns, Mr. Siew adds an additional step. He slowly smokes the peppercorns with local mango redwood. Mr. Siew’s pepper is infused with a big, beautiful, sweet and smoky aroma that will trick your inner Homer Simpson into thinking BACON! (Even though there is no actual bacon involved.)

Look, I’m not just blowing smoke here. That’s Mr. Siew’s job. And he’s darn good at it.
